    Introduction

    Hello, my name is Cruz Macias Jr., and I work as a firefighter for one of the largest fire departments in California. The unveiling of my second book is an honor that I am unable to describe. I am writing this book for the many who have requested a recipe at the firehouse, or for anyone who simply wants to learn how to cook like a fireman. Based on what I have learned during my twenty-five plus years of cooking at the fire house and at home, is most people, as well as, firemen or firefighters (you choose what you want to call yourself) have a big appetite for great tasting food. The fire station is our second home, and an integral part of the station lifestyle includes feeding hungry firefighters. Hence, the reasoning for the recipes in this book being written in large portioned sizes. All of these recipes are portioned to feed six people, and in some cases, even more. At my department we eat both lunch and dinner at the station, therefore, we cook a lot. Have plenty and don’t lay short, are words to live by at most fire stations.

    Since the release of my first book, Fireman Favorites, there have been many new and exciting endeavors I have experienced. I have taken my cooking skills to new limits by entering many different cooking competitions, where I have placed, and won on several occasions. I even had the honor of being casted
