    Make America Great Again Muffins

    Ingredients

    2 ¼ cups all-purpose flour

    2 teaspoons baking soda

    ½ teaspoon salt

    1/4 cup old-fashioned oats

    1 tablespoon ground cinnamon

    ¼ teaspoon nutmeg

    1 ¼ cups granulated sugar

    1 cup vegetable oil

    2 tablespoons melted

    3 eggs

    1/3 cup crushed pineapple

    1 cup peeled apples, chopped

    1 cup carrots, grated

    ½ cup coconut

    ½ cup raisins

    1 ½ teaspoons vanilla

    ¾ cup chopped pecans

    Set oven 375°F – Line 18 muffin cups with paper muffin liners.

    In mixing bowl sift flour, baking soda, salt, oats, cinnamon, and nutmeg. In separate bowl add eggs, vanilla, butter, and oil. Mix well and slowly incorporate into flour mixture. Add sugar, carrots, apples, pineapple, coconut, raisins, and pecans.

    Fill the paper liners and bake for 25 minutes, or until toothpick comes out clean.

    High on the Hog for Me but Not for Thee Breakfast Casserole

    Ingredients

    20 ounces shredded, thawed hash browns

    1 pound cooked and crumbled sausage

    ½ cup onion, finely chopped

    ¼ cup red pepper

    8 eggs, lightly beaten

    1 (12-ounce) can evaporated milk

    2 cups cheddar cheese

    Salt/pepper to taste

    Add some red pepper flakes to kick it up a bit

    Brown sausage and in the last few minutes of cooking, add onion and red pepper. Cook for two or three minutes, then drain.

    Layer hash browns in a lightly greased 9 x 12 dish. In a separate bowl mix together eggs, milk, 1 cup cheese, and salt/pepper.

    Add the sausage mixture over the hash browns and pour the egg/milk mixture over the top. Sprinkle the remaining cheese over the top.

    Bake at 350°F for 60 minutes.

    Ingredients

    2 cups buttermilk

    2 1/2 cups all-purpose flour

    4 teaspoons baking powder

    3 teaspoons granulated sugar

    2 teaspoons
