    Salad

    Tuna Salad with Vinaigrette

    Ingredients

    6 ounces drained canned tuna

    1/2 cup diced carrots

    1/2 cup chopped red or green cabbage

    1/2 cup diced celery

    1/4 cup chopped radishes

    1/4 cup chopped parsley

    1/4 cup golden raisins

    3 drops hot pepper sauce

    Zest of 1/2 minced lemon

    1/4 cup balsamic vinaigrette (or vinaigrette of your choice)

    1/4 cup mayonnaise

    Sea salt and freshly ground pepper to taste

    Directions

    Mix together the tuna, cabbage, carrots, celery, parsley, radishes, raisins in a large bowl. Add the pepper sauce, lemon, balsamic vinaigrette, mayonnaise. Season with sea salt and pepper to taste. Toss the ingredients to coat and combine.

    Cover and store in refrigerator for about 1 hour.

    Goat Cheese Salad with Mesclun

    Ingredients

    1/2 tsp olive oil to grease dish

    1 cup packed chopped mixed fresh herbs (parsley, sage, dill, tarragon)

    5 cups mesclun

    1 cup fine bread crumbs

    1 tsp dried thyme

    Salt and pepper

    1, 4-ounce log goat cheese

    1/4 cup olive oil

    1/4 cup vinaigrette of your choice

    Directions

    First of all preheat the oven to 400 degrees. Then grease a small baking sheet with olive oil (alternatively use a cooking spray).

    Mix together the chopped herbs and greens in a large bowl. Refrigerate.

    In a smaller and shallow bowl place the breadcrumbs, dried thyme, seasoning with salt and pepper to taste.
