The Nurse in the Kitchen is a compilation of recipe submissions provided by the members of Chi Eta Phi Sorority, Inc. located in states across the United States.Most of the recipes included in this cookbook are quick, easy to prepare, and compliment a busy lifestyle. Some may require lengthy cooking but these often need very little work.
This cookbook is dedicated to the Founder, Aliene Carrington Ewell and Jewels: Clara E. Beverly, Lillian Mosely Boswell, Gladys Louise Catchings, Bessie Foster Cephas, Henrietta Smith Chisholm, Susan Elizabeth Freeman, Ruth Turner Garrett, Olivia Larkins Howard, Mildred Wood Lucas, Clara Belle Royster, and Katherine Chandler Turner. Their memory will live on, as members of Chi Eta Phi Sorority, Inc. continue to live up to the motto: Service for Humanity. .
Countless individuals have contributed a great deal of time, effort and commitment to the tasks of collecting, editing, and preparing the manuscript for this project. While space does not permit listing everyone by name, Psi Phi Chapter would like to express genuine appreciation for the contributions and support of the national membership of Chi Eta Phi Sorority, Inc.
A special thank you is extended to Janice Bonner-Davis RN (a member of Psi Phi Chapter located in Baton Rouge, Louisiana) who was the visionary for this project and instrumental in developing the initial groundwork. History of Chi Eta Phi Sorority, Inc.
Chi Eta Phi Sorority, Inc. is a national sorority of registered professional nurses and nursing students. Aliene Carrington Ewell was born in Norfolk, Virginia and graduated from Freedman’s Hospital School of Nursing in Washington, DC and the District of Columbia Teachers’ College. She lived in Washington, DC, and worked as a professional nurse and administrator. Mrs. Ewell retired as director of the Iona Whipper Home for Unwed Girls and continued living in Washington, DC, until her death.
In the 1930s, opportunities for black nurses to fully participate in professional nursing activities were restricted. Black nurses were not permitted to join in the state nurses’ associations in the South and were restricted in the degree of involvement as members of the northern state associations. Additionally, restrictions in employment relegated black nurses to working in segregated facilities and to positions where there was little or no opportunity for advancement. Mrs. Ewell and many of her colleagues were concerned about these restrictions and felt that a black nurse should be able to equally participate in those areas of society where their expertise and knowledge would be most helpful.
As a result of these concerns, Chi Eta Phi Nursing Sorority, Inc., was founded on October 16, 1932 at Freedman’s Hospital School of Nursing by Mrs. Ewell and 11 other colleagues, referred to as the Jewels

Beverly, Lillian Mosely Boswell, Gladys Louise Catchings, Bessie Foster Cephas, Henrietta Smith Chisholm, Susan Elizabeth Freeman, Ruth Turner Garrett, Olivia Larkins Howard, Mildred Wood Lucas, Clara Belle Royster, and Katherine Chandler Turner. Their memory will live on, as members of Chi Eta Phi Sorority, Inc. continue to live up to the motto: Service for Humanity.
Chi Eta Phi Sorority is a professional organization dedicated to addressing the concerns and issues surrounding black professional nurses. Alpha was the first Chapter and membership was restricted to black, female, professional nurses. Today, all professional nurses are eligible for membership without regard to ethnicity, race or gender.
Today, the Sorority is comprised of 90 graduate and 50 undergraduate chapters with a combined membership of more than 8,000 in the five regions in the continental USA, US Virgin Islands, and Monrovia, Liberia.

Criteria for Greatness
Aliene Carrington Ewell was a visionary and activist whose creative spirit, leadership, genuine concern for her fellowman and belief in the power of enlightenment
left a legacy for the citizens of the world. Through her efforts generations of nurses and their constituents have reaped untold benefits and bear witness to the ongoing achievement of the members of Chi Eta Phi Sorority, Inc.
The National Great Blacks In Wax Museum, Inc. in Baltimore, MD created a wax figure of Aliene Carrington Ewell, the visionary founder of the Sorority. The unveiling was held October 16, 2007, at the 75th anniversary of the founding of the Sorority.

missing image fileMary Eliza Mahoney, America’s first black professional registered nurse, was a one of the pillars and co-founders of the National Association of Colored Graduate Nurses (NACGN) in 1908. In 1976 she was posthumously admitted to the Nursing Hall of Fame. Ms. Mary Eliza Mahoney appears at the Great Blacks in Wax Museum in Baltimore, Maryland.

Vision
Committed and Empowered to Provide Community Service in a Global Society
is the current Sorority theme. The theme recognizes the strength and vision of our founders.
We continue in their tradition of visionary leadership by providing meaningful service initiatives and moving beyond the traditional approaches to improve our communities. Since its establishment, Chi Eta Phi Sorority, Inc. has clearly established itself as a service organization that strives to confront the problems of African Americans.
Purposes
The five purposes of Chi Eta Phi Sorority, Inc. are as follows:
• To encourage continuing education among members of the nursing profession.
• To have a continuous recruitment program for nursing and the health professions.
• To stimulate a close and friendly relationship among the members.
• To develop working relationships with other professional groups for the improvement and delivery of health care services.
• To constantly identify a corps of nursing leaders within the membership who will function as agents of social change on the national, regional, and local level.
Motto: Service for Humanity
In realizing its motto of Service for Humanity
, a wide range of programs addressing education, health promotion and disease prevention, and international development have emerged and evolved over the years.
