    CHAPTER 2 ~ SAMHAIN RECIPES

    The Witches’ New Year ~ October 31ST

    Samhain is the Witches’ New Year. Celebrate this occasion by decorating your table with orange, black, copper and gold candles and seasonal arrangements of mums, calendula, cosmos, fresh apples and nuts.

    Recommended beverages are apple cider or ale.

    Samhain Menu

    Apple & Pecan Salad

    Beef & Beer Stew

    Pumpkin Spice Muffins

    APPLE & PECAN SALAD

    Ingredients:

    4 large Granny Smith or Cortland apples

    2 Tbsp/25 ml lemon juice

    2 celery stalks

    1/3 cup/75 ml pecans, chopped

    1/3 cup/75 ml mayonnaise

    ¼ cup/50 ml plain yogurt

    Salt, pepper & grated nutmeg

    Directions:

    Peel, core and dice apples. Place in a large bowl and sprinkle with lemon juice to keep flesh from turning brown. Dice celery stalks and add to bowl. Mix in pecans.

    In a separate container, mix mayonnaise and yogurt. Add seasonings to taste. Stir into apple/celery mix
