Roast chicken with oranges

Pollo all’arancia

Herbs grow easily and abundantly under Sicily’s hot sun and home cooks often dry their own and make blends that can be used all year long. For this roast chicken, a combination of dried rosemary, sage, bay leaf, mint, geranium, chilli, and orange peel works beautifully against the acidity of the wine and citrus.

olive oil, for the pan

one whole chicken, about 1.8kg

one yellow onion, peeled and quartered

one unwaxed lemon, quartered

two large sprigs of fresh rosemary

2 tbsp mixed dried herbs

1 tsp fine sea salt

½tsp freshly ground black pepper

180ml fresh orange juice

180ml white wine

Preheat the oven to 200°C/Gas Mark 6. Oil a roasting
