KEFIR GRANOLA BERRY PARFAIT
Serves 4
▪ 20g chia seeds▪ 100ml rice milk▪ 200g frozen mixed berries, defrosted▪ 20ml maple syrup▪ 200g kefir▪ 60g granola, gluten-free▪ Fresh berries and mint leaves
1 Soak the chia seeds in the rice milk overnight; they should soak for a minimum of 8 hrs. Defrost the berries, ready for the morning.
2 The next day, stir the maple syrup into the chia. Now layer the ingredients in 4 glass jars: start with the defrosted berries, with a little of their juice, then top with the chia mix.
