BHUNI GOBI (BROWNED SPICED CAULIFLOWER)
Serves 4 Takes 25-30 minutes
INGREDIENTS
• 3 tbsp peanut, olive or other vegetable oil• 870g/1lb 15oz cauliflower florets (see step 1)• 1 tbsp fresh ginger, peeled and cut into fine, smallish julienne strips• ½ tsp cumin seeds• 100ml/4fl oz water• 1 tsp salt• Freshly ground black pepper• ½ tsp Kashmiri chilli powder or cayenne pepper• ½-1 fresh hot green chilli, such as bird’s eye, cut into very fine rounds (optional)• 2 tsp lime juice, or to taste• A generous handful of fresh green coriander leaves
