MONDAY HERBY CHICKEN STRIPS
INGREDIENTS
■ 3 to 5 fresh lemons
■ 5T honey
■ 4 skinless chicken breasts, cut into strips
■ 1T olive oil
■ A handful of fresh rosemary or thyme, roughly chopped
METHOD
1. Juice the lemons well and mix with the honey to make a marinade. Baste the chicken strips with this mixture (saving a bit), and then sprinkle with the fresh herbs.
2. Heat the olive oil in a large saucepan. Fry the chicken strips once the oil is hot. Seal the chicken strips on one side before turning them over to seal the other side.
Once the strips have been sealed, add the leftover honey and lemon mixture, a little bit at a time.
