Courgette fritters with poached eggs
Low carb and rich in sleep-inducing melatonin, this healthy dinner comes together in a jiffy.
SERVES 4 PREP 15 MINS COOK 15 MINS
✱ 100g broccoli, finely chopped
✱ 250g courgette (about 3 medium), grated
✱ 40g pecorino, grated
✱ 6 free-range eggs
✱ 45g chickpea flour
✱ Zest and juice of 1 lime
✱ 1 bunch of parsley, finely chopped
✱ 1tbsp sunflower seeds
✱ ½tsp sumac, plus a little extra (optional)
✱ Sunflower or peanut oil, for frying
✱ 2tbsp white wine vinegar
✱ 4tbsp creme fraiche
✱ 1 red chilli, chopped
Mix together the broccoli, courgette, pecorino, 2 eggs, chickpea flour, lime zest and juice, parsley, sunflower seeds and sumac. Heat a few tbsp of oil
