Orange, grilled peach and tomato salad

Enjoy the last of the summer’s bounty with this flavoursome salad. It’s a little sweet, a little savoury and packed with antioxidants.

4 peaches, pitted and quartered4 shallots, sliced1tbsp cider vinegar1tbsp caster sugar4 heritage tomatoes, sliced horizontally into rounds2 blood oranges, rind removed and sliced horizontally into rounds

For the marmalade and mustard dressing:

1 green chilli1tsp fermented tofu (optional)1tbsp perilla sauce, soy sauce or vegan fish sauce1tsp English mustard1tsp marmaladeHandful Thai
