✱ 250g self-raising flour
✱ 125g vegetable suet
✱ 80g caster sugar
✱ 150g mixed dried tropical fruit, chopped
✱ Zest 2 limes
✱ 200ml whole milk
✱ 1 pineapple, peeled, cored and cut into wedges
✱ Handful toasted flaked coconut, to serve
