MUSSELS IN LEEK AND WHITE WINE SAUCE
A delicate and delicious seafood meal that’s quick and easy to make and is ideal for entertaining.
Serves: 4
Preparation time: 20 minutes
Cooking time: approximately 30 minutes
♥ 400g spaghetti or long thin pasta of your choice
♥ 60ml olive oil
♥ 4 leeks, finely sliced
♥ 2 sticks celery, chopped
♥ 3 cloves garlic, finely chopped
♥ 800g-1kg fresh mussels or frozen mussels in half shells
♥ 250ml dry white wine
♥ 10ml grated lemon zest
♥ 30ml fresh lemon juice
♥ handful fresh Italian parsley, roughly chopped
♥ 125ml cream
1 Cook the pasta in a large saucepan of boiling salted water until al dente. Drain and reserve 250ml of the cooking water.
2 While the pasta is cooking, heat the olive oil in a large saucepan over a medium heat. Add the leeks and celery and sauté until they have softened. Add the garlic and cook for 2 more minutes.
Add the mussels and wine. Cover the saucepan with the lid and leave to simmer for 5-8 minutes until the mussels have opened. Discard any mussels that
