Spiced lamb pilaf

SERVES 4 PREP + COOK TIME 40 MINUTES.

1½ cups (300g) basmati rice
1 tablespoon extra virgin olive oil
500g lamb leg steaks, sliced thinly
1 large (200g) onion, chopped finely
2 cloves garlic, sliced thinly
4cm piece (20g) fresh ginger, grated finely
2 bay leaves
2 teaspoons ground coriander
½ teaspoon ground cinnamon
½ cup (75g) coarsely chopped dried apricots
