Flaky favourite

We are so fortunate in New Zealand to have what I would say is some of the best salmon in the world. Luxurious and healthy, it is suitable for many preparations, including a pie.

SALMON, PRAWN AND ZUCCHINI PIES

Use six 11cm round pie tins3 zucchini, grated1 tbsp olive oil300g raw prawns, roughly chopped½ tsp grated lemon zest2 tbsp crème fraîchefreshly ground black peppersalt1 tsp cornflour1 quantity flaky pastry (see next page)450g piece fresh salmon, cut into 6 even portions1 egg

Preheat the oven to 210°C fan bake.

In a frypan over a medium heat, sweat the zucchini in the oil until just cooked and still bright green – about 5 minutes – stirring regularly. Set aside to cool.
