Spiced maple nut mix

Offering the perfect balance of sweet and salty, this also provides a delicious kick of spice for good measure. It's ideal when served with a glass of fizz or your favourite festive cocktail, and also makes a wonderful edible gift.

Serves 12  Ready in 25 mins

400g natural mixed nuts
4tbsp maple syrup
2tsp mixed spice
2tsp sweet paprika
100g mixed cranberries and chopped apricot pieces

You will need:

Baking tray lined with baking parchment

1 Heat the oven to 160C/Gas 3. Put the nuts in a large bowl, and mix in the maple syrup, spices and 1tsp salt.

Pour onto the baking tray and cook for around 20 mins, stirring halfway through. Remove from the oven and allow to cool. Finally, mix through the dried fruits.
