Quick and easy tacos
There’s no cutlery needed with these mix and match crowd pleasers – choose chicken, pork or prawns or make all 3!
SERVES 4 PREP 20 MINS, PLUS 1 HR MARINATING TIME COOK 10 MINS
✱ 2 chicken breasts, cut into 1cm strips, 250g pork fillet, cut into 1cm strips or 200g peeled raw king prawns
✱ 1 red onion, thinly sliced
✱ Juice of 1 lime
✱ 4 crunchy tacos
For the smoky chilli marinade:
✱ 2 garlic cloves, crushed
✱ 1tsp cumin seeds
✱ 1tsp smoked paprika
✱ 1tbsp olive oil
For the toppings:
✱ 1 tomato, deseeded and finely chopped
✱ 50g feta or Cheddar, crumbled
✱ 1 avocado, sliced
✱ 1 gem lettuce, finely shredded or rocket
✱ Small bunch coriander, roughly torn (optional)
✱ 1 mango, sliced
✱ 150ml soured cream
