Paella with a twist

Rice is one of my top five ingredients, and of course, the island girl in me loves seafood. And who doesn’t like cooking on a barbecue?

My dad was the cook in our house, making dishes from what we caught out of the ocean or what was in the pantry. Growing up with a single dad as your only parent! Dinner was served. I remember the first time my dad took me yabby hunting – getting all muddy when you push down the pump into the mud to suck them up, or pulling in the yabby basket and seeing them inside. Yabbies are so underrated – they have this sweet, juicy taste, and the meat just melts in your mouth like butter.
