Nani Mummy’s Prawn Karahi
SERVES 4
INGREDIENTS
2 tblsps ghee (or 1 tblsp unsalted butter and 1 tblsp sunflower oil)
1 heaped tsp cumin seeds
½ tsp nigella seeds
½ tsp carom seeds – optional
1cm ginger, finely grated
4 large ripe tomatoes, coarsely grated, skins discarded
2 tblsps concentrated tomato puree (tomato paste)
¼ tsp turmeric powder
½ tsp Kashmiri chilli powder (or other chilli powder or paprika)
Salt, to taste
450g shelled, deveined fresh raw prawns

Juice of
