Pea and Pasta Salad
SERVES 4
INGREDIENTS
500g fresh or frozen broad beans, shelled
400g farfalle
4 cups (560g) frozen peas
100g snow peas
100g crumbly feta Finely grated zest and juice of 1 lemon
2–3 garlic cloves, crushed
⅓ cup (80 ml) olive oil
1 large handful of mint leaves
METHOD
1 If using fresh beans, put them in a heatproof bowl, pour boiling water
