Greens & feta tarte soleil
SERVES 4
280g mixed leafy greens, roughly chopped (e.g. spinach, kale, rocket, lettuce, pak choi)
2tbsp freshly chopped dill
2tbsp freshly chopped mint
3 spring onions, thinly sliced
Grated zest of 1 lemon
60g feta, crumbled
30g walnuts, roughly chopped
2 garlic cloves, grated
2 sheets puff pastry
Plain flour, for dusting
2tbsp olive oil
1tbsp milk
Salt and black pepper
1 In a large mixing bowl, combine the chopped leafy greens, herbs, spring onions, lemon zest, feta, walnuts, garlic, a generous pinch of salt and ¼tsp black pepper and stir well to combine until it’s a thick, spreadable paste. Set aside.
