BUNNY DODGERS
Have lots of fun making these Easter bunnies sandwiched with fresh strawberry jam. Any excess jam will keep covered in the fridge for a month.

INGREDIENTS
• 200g/7oz butter• 200g/7oz caster sugar• 1 egg• 1/tsp lemon zest• 400g/14oz flour• 100g/4oz ready-made butter icing (or home-made if you prefer)• Small mini Smarties or coloured sweets, for eyes
