• 100g/4oz red or natural glacé cherries, quartered• 225g/8oz baking spread, straight• 225g/8oz light muscovado sugar• 4 large eggs• 225g/8oz self-raising flour• 225g/8oz sultanas• 100g/4oz currants• 100g/4oz ready-to-eat dried apricots, snipped into pieces• 50g/2oz candied peel, chopped• Finely grated zest of 2 lemons• 2 level tsp ground mixed spice
