ZIMTSTERNE (cinnamon stars)

Makes About 40, depending on the cutter size Takes About 30 minutes, plus cooling

INGREDIENTS

• 250g/9oz almonds, ground (skin on)
• 275g/10oz icing sugar, plus extra for dusting
• 1 tsp ground cinnamon
• 2 medium egg whites
• 1 tbsp almond liqueur or rum

1. Preheat the oven to 180°F, fan 160°C, gas 4. Line a baking sheet with baking paper.

2. Put the almonds, 150g/5oz of the icing sugar and the cinnamon in a bowl and mix together. Add 1 egg white and the liqueur and knead with your hands until you get a smooth ball.

Dust the work surface with icing sugar and roll out the dough until 1cm/½in thick. Using a star-shaped cooking cutter of your preferred size, cut out
