SERVES 4 (AS A MAIN)

50g unsalted cashew nuts
1 tsp cornflour or gluten-free cornflour
1½ tbsp salt-reduced soy sauce or gluten-free soy sauce
3 tbsp oyster sauce or gluten-free oyster sauce
1 tbsp rice vinegar
1 tbsp honey
1 tbsp olive oil
280g lean rump steak, trimmed of fat, thinly diagonally sliced
4cm piece of ginger, peeled and cut into matchsticks
2 cloves garlic, crushed
200g snow peas, diagonally halved
110g (½ cup) Doongara Low GI White Rice, cooked following packet directions, to serve
2 bunches broccolini, steamed, to serve
2 bok choy, halved and steamed, to serve
