Cauli buffalo ‘wings’ with ranch sauce

½ cup (75g) plain spelt flour
2 teaspoons smoked paprika
2 teaspoons onion powder
2 cloves garlic, crushed
1 large cauliflower (2kg), cut into medium florets
½ cup (125ml) hot sauce (see Test Kitchen notes)
2 tablespoons vegan butter, melted
1 tablespoon lemon juice
2 teaspoons maple syrup halved baby cucumbers and celery stalks, to serve

RANCH SAUCE

⅓ cup (100g) vegan mayonnaise
2 tablespoons coconut yoghurt
1 small clove garlic, crushed
