Smoked gammon with cherries
Serves 8 with leftovers Preparation time 40 minutes Cooking time 2 hours 30 minutes
You need
• 3 kg easy-carve gammon
• 1 onion, roughly chopped
• 2 carrots, roughly chopped
• 1 bay leaf
• 500 ml ginger beer
• cloves (optional)
For the glaze
•½ cup cherry jam
• 2 teaspoons Dijon mustard
• about Va cup liquid from the
gammon pot
• 2 tablespoons castor sugar
• ½ cup glace cherries (optional)
Here's how
1 Put the gammon, vegetables and bay leaf in a pot and add the ginger beer. The gammon should fit snugly in the pot. Add water until the gammon is submerged. Bring to a boil, lower the heat and simmer with a lid on for 2 hours.
Remove the meat from the liquid and let it rest on a chopping board for 20 minutes (or until it's cool enough to handle). Preheat the oven to 220° C.
