PAVLOVA WITH MANGO AND NUTS
SERVES: 8-10
PREP + COOKING TIME: 2 hours 35 minutes
INGREDIENTS
▶ 4 egg whites, at room temperature
▶ 2 ml salt
▶ 250 ml caster sugar
▶ 2 tsps cornflour
▶ 1 tsp vinegar
▶ 1 tsp vanilla extract
For the topping:
▶ 250 ml whipping cream
▶ 2 T caster sugar
▶ Fresh mango, sliced thinly
▶ 1/4 cup hazel nuts
▶ Granadilla pulp sauce, to drizzle
METHOD
1. Preheat the oven to 140°C. Line a baking tray with baking paper.
2. Beat eggs for about 3–5 minutes or until foamy, then mix in salt. Add sugar and beat until fluffy and stiff peaks form.
