SOMETHING SWEET
PAVLOVA WITH MANGO AND NUTS
SERVES: 8-10

TIME: 2 hours 35 minutes
INGREDIENTS
4 egg whites, at room temperature
2 ml salt
250 ml castor sugar
2 tsps cornflour
1 tsp vinegar
1 tsp vanilla extract
For the topping:
250 ml whipping cream
2 tbsps castor sugar
Fresh mango, thinly sliced
¼ cup hazel nuts
Granadilla pulp sauce, to drizzle
METHOD
1. Preheat the oven to 140 °C. Line a baking tray with baking paper.2. Beat eggs for about3-5 minutes or until foamy and mix in salt. Add sugar and beat4. Use a spatula to gently start shaping your pavlova. Start at the bottom and gently make nice neat lines moving towards the top.5. Reduce heat to 120 °C and place pavlova in the oven on the middle rack. Cook for 1 hour 20 minutes. Turn off the oven, and leave the pavlova in the oven with the door closed for another hour
