You can freeze these cookies in an airtight box for up to a month. They’ll soften as they defrost, so cook for a few mins before serving.

Makes 30Ready in 40 mins

125g rolled jumbo oats
250g packet dried apricots, chopped
100g desiccated coconut
100g unsalted cashew nuts, chopped
100g blanched almonds, chopped
50g ground almonds
1tsp ground cinnamon
2 small very ripe bananas
4 tbsp sunflower oil
½-1tsp sugar-free vanilla extract

6.5cm plain round cutter, oiled, 2 large baking sheets lined with baking parchment
