Salmoriglio is a Sicilian sauce used as a marinade or a dressing that’s traditionally made with olive oil, lemon, garlic and oregano. It’s really good drizzled over fish.
FOR THE SALMORIGLIO
• 125 ml (½ cup) olive oil
• grated zest and juice of 2 lemons
• 2 garlic cloves, peeled and chopped finely
• 5ml (1 tsp) dried oregano
• a few sprigs of flat-leaf parsley, plus extra to serve
• sea salt and freshly ground black pepper
