30ml sake (go-to is Tengumai brand)
2 tsp *yuzu marmalade, jam or spread
10ml pineapple syrup
60ml prosecco
15ml lime juice

Build all ingredients in a large wine glass and stir. Add ice and cucumber slice.

140g yellowfin tuna belly, trimmed + diced
20g salmon caviar
50g avocado, thinly sliced
30ml white shoyu dressing (see right)
80g sushi rice (see right)
2 sheets toasted nori, halved Furikake (optional)

100ml rice vinegar
35g sugar
5g salt
1 small piece kombu
