BEETROOT BURGER WITH ROOT VEG CHIPS

With additional fibre and fermented dairy, these veggie burgers are as flavoursome as they are bright.

SERVES 6 PREP 15 MINS COOK 35 MINS

1tbsp olive oil, plus extra for brushing the burgers

1 red onion, finely chopped

2tsp ground cumin

1 slice day-old sourdough

400g beetroot, peeled, coarsely grated

2 x 400g cans chickpeas, drained and rinsed

2 heaped tbsp flaxseed

2tbsp kefir yogurt

1 egg

1tbsp tahini

1tbsp rice flour, plus extra if needed (or use corn flour)

For the root veg chips:

1 large, sweet potato (skin on), sliced
