Bring out the BARBECUE

HOT HONEY CHICKEN

Sweet, sticky honey, spicy chilli and succulent chicken – this is the definition of a crowd-pleaser!

SERVES 4

4 chicken supremes or skin-on breasts
4tbsp honey
2tsp chilli flakes
2 garlic cloves, grated
✣Zest and juice of 1 lime, plus 2 limes, halved, to serve

For the slaw:

3 carrots – we used mixed heritage
3 spring onions
¼ red cabbage
45g (1½oz) natural yogurt

1 Score the chicken skin with a sharp knife and place in a large bowl or container. Mix with honey, chilli, garlic, and lime zest and most of the juice, then rub onto the chicken. Season with a generous pinch of salt. Leave to marinate for at least 1 hr or ideally overnight.

2 For the slaw, peel and thinly slice the carrots. Roughly slice the spring onions. Remove the thick core from the cabbage and shred. Mix the ingredients
