Garlic-Herb Butter Roast Beef

MAKES 8 TO 10 SERVINGS

All it takes are herbs, butter, garlic, and onions to make this roast beef a showstopping centerpiece to your holiday meal.

1 (5- to 5½-pound) beef top-sirloin roast
1 cup unsalted butter, softened
2 shallots, minced
4 cloves garlic, minced
1 tablespoon chopped fresh parsley
1 teaspoon fresh thyme leaves
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh oregano
2 teaspoons kosher salt
½ teaspoon ground black pepper
¼ teaspoon crushed red pepper
2 red onions, each quartered
1 head garlic, halved
Garnish: fresh rosemary sprigs, fresh oregano

1. Remove beef from refrigerator and let sit at room temperature for at least 30 minutes before cooking.

2. Preheat oven to 400°.
