no-bake neapolitan cheesecake slice

serves 20 | prep 20 mins (+ overnight chilling)
2 x 200g pkt Tim Tam Original biscuits
90g butter, melted, cooled
4 gelatine leaves
750g cream cheese, at room temperature
100g ( 1 /2 cup) caster sugar
1 tsp vanilla extract
300ml ctn thickened cream
2 tbs Dutch cocoa, sifted
Rose pink liquid food colouring, to tint
1 tsp strawberries and cream essence
Melted dark chocolate, to drizzle
Whipped cream, to serve
Chocolate sprinkles, to serve
Small maraschino cherries, to serve
1 Grease a 20 x 30cm slice pan. Line the base and sides with baking paper, allowing paper to overhang 2cm above the sides.
2 Place biscuits in a food processor. Process until finely chopped. Add the butter. Process until well combined. Press mixture over base of prepared pan. Place in the fridge until required.
3 Place the gelatine leaves in a bowl. Cover with cold water and set aside for 5 minutes or until softened. Squeeze the excess water from the gelatine. Place gelatine in a small saucepan over medium heat. Cook for 30 seconds or until melted. Remove from heat.
4 Use electric beaters to beat cream cheese, sugar and vanilla in a bowl until pale and creamy. Gradually add the hot gelatine, beating until combined. Add cream. Beat until well combined. Divide mixture into 3 equal portions. Stir cocoa into 1 portion. Tint another portion pink with food colouring and stir in essence. Keep the remaining portion plain.
5 Spoon the chocolate mixture over the prepared base. Use a spatula to smooth the surface. Place in the freezer for 5 minutes. Top with the plain mixture. Smooth the surface. Place in the freezer for 5 minutes. Carefully top with remaining strawberry mixture. Smooth the surface. Place in the fridge for 4 hours or overnight to chill until set.
6 Remove slice from fridge 10 minutes before serving. Slice into pieces. Drizzle with melted chocolate. Top with whipped cream, chocolate sprinkles and cherries.
