MISO SALMON & NORI GINGER BROWN RICE
SERVES 4 PREP 15 MINS COOK 25 MINS
• 1/3 cup shiro miso
• 2 tbsp honey
• 1 tbsp rice wine vinegar
• 2 tsp tamari
• 4 skin-off, boneless salmon fillets
• Steamed broccolini, pickled ginger, to serve
GINGER RICE
• 450g packet microwave brown rice and quinoa
• 1 tbsp finely chopped ginger
• 2 tbsp sushi seasoning
• 2 tbsp tamari
• 1 cup peeled edamame
• 1 green onions, sliced, plus extra, shredded, to serve
1 Preheat oven to 180°C. Line an oven tray with baking paper.
In a bowl, combine miso, honey, vinegar and tamari. Add salmon and turn to coat. Arrange on prepared tray. Bake 15 mins or
