MISO SALMON & NORI GINGER BROWN RICE

SERVES 4 PREP 15 MINS COOK 25 MINS

⅓ cup shiro miso
2 tbsp honey
1 tbsp rice wine vinegar
2 tsp tamari
4 skin-off, boneless salmon fillets
Steamed broccolini, pickled ginger, to serve

GINGER RICE

450g packet microwave brown rice and quinoa
1 tbsp finely chopped ginger
2 tbsp sushi seasoning
2 tbsp tamari
1 cup peeled edamame
1 green onions, sliced, plus extra, shredded, to serve

1 Preheat oven to 180°C. Line an oven tray with baking paper.

In a bowl, combine miso, honey, vinegar and tamari. Add salmon and turn to coat. Arrange on prepared tray. Bake 15 mins or until cooked to your liking.
