Forget searching the cupboards for the right cake tin. Your humble frying pan or skillet works double time here to create the perfect one-pan cake.
• 125 g unsalted butter
• ½cup (125 ml) milk
• 2teaspoons vanilla extract
• ¾cup (165 g) raw caster (superfine) sugar, plus extra
• 1cup (80 g) desiccated coconut
• 1½ cups (225 g) wholemeal (wholewheat) self-raising (self-rising) flour
• 1teaspoon baking powder
