Tips
Trim the root ends of the onions lightly so the wedges hold together. The lamb can be cooked in the oven: first brown the meat in a large pan, then roast at 200°C for 35 minutes or until cooked as desired.
Tip
The pumpkin is best roasted just before serving.
PORK BELLY WITH CRISP CRACKLING & HERB SALT
SERVES 6
PREP + COOKING TIME
3 HOURS 30 MINUTES, PLUS STANDING TIME
• 1 tbsp sea salt flakes
• 2 tsp finely chopped fresh lemon thyme leaves
• 2 tsp finely chopped fresh sage leaves
• ½ tsp ground allspice
• 1 tsp freshly ground black pepper
• 2 tsp finely grated blood orange zest
• 1.7 kg pork belly, rind unscored
• 1 tbsp olive oil
1. Preheat oven to 160°C. Combine salt, herbs, allspice, pepper and zest in a small bowl.
2. Place pork, rind side down, in a medium baking dish. Rub salt mix over flesh (not the rind). Cover dish tightly with tinfoil.
3. Roast pork for 3 hours or until tender. Remove tinfoil; turn pork, rind side up. Cover dish loosely with tinfoil; rest for 30 minutes.
