Serves 6, Prep and Cook 5 hours
2 large zucchini (500g), peeled into ribbons
425g tub fresh carbonara pasta sauce
1¹/ ³ cups grated mozzarella
6 instant lasagne sheets

120g tub chargrilled eggplant, drained, chopped
¼ cup chopped fresh basil, plus leaves to garnish
1 Lightly grease a removable bowl of a 5 to 6-litre capacity slow cooker.
