SPANISH CHICKEN
SERVES 6 PREP AND COOK: 5 HOURS, 20 MINS
12 chicken drumsticks (2kg)
¼ cup olive oil
2 large red onions, chopped
100g sliced Spanish salami, roughly chopped
3 cloves garlic, crushed
3 tsps smoked paprika
1 cup dry white wine
700g jar tomato passata cooking sauce
¹/³ cup tomato paste
2 large red capsicums, cut into 4cm pieces
1 cup drained, pitted Sicilian olives
Crusty bread, to serve
1 Season chicken with salt and pepper.
2 Heat 1 tblsp of the oil in a large, non-stick frying pan over a high heat. Add chicken in three batches, adding 1 tblsp of the remaining oil with each batch. Cook, turning occasionally, until browned all over. Transfer to a removable bowl of a 5- to 6-litre-capacity slow cooker.
Reduce heat to medium. Add onions, salami, garlic
