SERVES 4 PREP 15 MINS COOK 1 HOUR 45 MINS

2 tbsp olive oil
750g diced lamb leg, shoulder or forequarter
1 onion, finely sliced
1 red capsicum, seeded, finely chopped
1 tbsp ras el hanout spice mix
1 garlic clove, finely chopped
4 cups chicken stock
400g can diced tomatoes
750g butternut pumpkin, peeled, seeded, chopped
400g can chickpeas, rinsed, drained
flatbread, natural yoghurt, fresh coriander, to serve
