Tofu “Fried” Rice

DIETARY EXCHANGE 1 BREAD/STARCH, 1 FAT, 1 VEGETABLE, 1 MEAT

2 ounces extra-firm tofu
¼ cup finely chopped broccoli
¼ cup thawed frozen shelled edamame
⅓ cup cooked brown rice
1 tablespoon chopped green onion
½ teaspoon low-sodium soy sauce
⅛ teaspoon garlic powder
⅛ teaspoon sesame oil
⅛ teaspoon sriracha* or hot chili sauce (optional)

1. Press tofu between paper towels to remove excess water. Cut into ½-inch cubes.

2. Combine tofu, broccoli, and edamame in large microwavable mug.

Microwave on high 1 minute. Stir in rice, green onion, soy sauce, garlic powder, oil, and sriracha, if desired. Microwave 1 minute, or until heated through. Stir well before serving.
