Tofu & vegetable soba noodle salad

250g snow peas, cut into matchsticks
2 large zucchini, cut into matchsticks
180g soba noodles
2 large carrots, cut into matchsticks
1 red capsicum, cut into matchsticks
1½ cups watercress
1 x 200g packet marinated tofu, thinly sliced
1½ tablespoons reduced-salt soy sauce
1½ tablespoons mirin
2 teaspoons sesame oil
¼ cup chopped peanuts, to serve

1 Place snow peas and zucchini in a large heatproof bowl. Cover with boiling water and blanch for 20 seconds. Refresh under cold running water. Drain.

Bring a large saucepan of water to the boil. Add noodles and cook according to packet instructions until al dente. Refresh
