500g chicken tenderloins, trimmed of fat
4 spring onions, thinly sliced, plus extra to serve
2 garlic cloves, crushed
2 teaspoons finely grated fresh ginger
1 long red chilli, deseeded, thinly sliced
3 cups reduced-salt chicken stock
1 teaspoon sesame oil
2 tablespoons reduced-salt soy sauce
1 bunch choy sum, roughly chopped
1 bunch baby bok choy, leaves separated
3 eggs, lightly beaten
1 x 100g packet shimeji mushrooms, cut into small clusters
