Aubergine & sesame dan-dan-style noodles

SERVES 1 PREP 15 mins COOK 15 mins EASY V

2 tsp sesame oil1 small aubergine, cut80g (1 nest) dried wheat noodles½ tsp Chinese five-spice powder1 small garlic clove, crushed pinch of ground Sichuan peppercorns1 tbsp tahini or Chinese sesame paste1 tbsp hoisin sauce1 tbsp light soy sauce2 tsp black rice vinegar1-2 tsp crispy chilli oil, to taste2 spring onions, thinly sliced2 tsp toasted sesame seeds (we used a mixture of black and white)
