Cinnamon plums

SERVES 4–6

8 plums (or any stone fruit), stoned, halved
2 tablespoons muscovado sugar
½ teaspoon ground cinnamon
2 tablespoons butter Mascarpone, to serve

SWEET PURI

1 cup plain flour, sifted
¼ teaspoon baking powder
¼ teaspoon salt
1 teaspoon sugar
1 tablespoon vegetable oil, plus extra shallow-fry

1 Preheat oven to 220°C. In a shallow dish, arrange the fruit in a tight-fitting single layer. Mix together the sugar and cinnamon, then sprinkle over the plums. Dot butter
