BEEF WELLINGTON
The ultimate luxurious centrepiece.
PER SERVING 511 cals, 32g fat, 15g sat fat, 22g carbs
SERVES 8
✣45g (1½oz) unsalted butter
✣1kg (2¼lb) quality beef fillet – we used thegingerpig.co.uk
✣75g (2½oz) mushrooms, finely chopped
✣1tbsp Madeira wine
✣100g (3½oz) liver or duck pâté
✣15g (½oz) breadcrumbs (a handful)
✣500g pack of puff pastry
✣400g (14oz) spinach
✣1 egg, beaten You will need:
✣A very sharp knife or razor blade
1 Heat the oven to 220C/Gas 7. Melt half the butter in a frying pan, turn up to a high heat and sear the beef on all sides until browned. Remove from the pan and set aside.
2 Reduce the heat, add the remaining butter and fry the mushrooms for 2 mins, then add the Madeira. Bring to the boil and stir for 1
