Chilli con carne

SERVES 4

PREP + COOK TIME 3 HOURS 45 MINS

½ cup (100g) dried kidney beans
750g beef chuck steak
1 litre (4 cups) water
1 tablespoon olive oil
1 medium onion, chopped coarsely
1 garlic clove, crushed
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon sweet paprika
½ teaspoon cayenne pepper
400g can crushed tomatoes
1 tablespoon tomato paste
2 spring onions, chopped coarsely
2 tablespoons coarsely chopped coriander
2 tablespoons finely chopped pickled jalapeño chillies

1 Place beans in medium bowl and cover with water. Stand overnight. Drain.

2 Combine beef and the water in large saucepan over high heat, bringing to the boil. Reduce heat and simmer, covered, for 1 ½ hours.
